I made this for dinner. A salmon burger over a bed of steamed kale topped with alfalfa sprouts and sun dried tomatoes. Oooof
Anyways, aside from all that. I did 51 minutes worth of HIIT running: 4 minutes of jogging, 1 minute of sprinting 8 times (plus ‘warm up’ jog, and ‘cool down’ jog). Meanwhile, yelling/coaching my sister into doing it with me. (She walked while I jogged ahead, waited and jogged in place, rinse, repeat)
THEN, upon our return we did the Jillian Michael’s 30 Day Shred video. A total of 600 calories burned and toppped it all off with my green tea vegan protein shake, I added 1 tbs of organic virgin coconut oil (for the added fat).
My goal (calorically speaking) for today was to up my fat intake — to 50%. I got to 45 I think, and lower my carb, and up my protein. I succeeded, not exactly to my goal but I’ll get it.
I have also been reading paleo diet books (The Primal Blueprint, and The Paleo Diet for Athletes) ALL DAY. I’m obsessed with nutrition, and how to do it right…HELP. This would also be my 4th day in a row working out. I kind of…feel like myself again.
Oh, and I’m making it a habit to walk home from work rather than finding a ride. It’s 1 mile of hilly lakeside beauty.

Uhhh, delicious! I’ve made blueberry oats before, but not with cinnamon. Now that I’ve done research on the benefits of cinnamon, I am probably going to figure out how to interpret it into my smoothies/shakes/breakfasts as much as possible.

I would like to say that I am on a two day winning streak as far as delicious breakfasts go. I kind of want to do a series of entries called the “ABC’s of overnight oats” and see if I am capable of making an oatmeal for every letter of the alphabet. It will be tricky and I’ll certainly have to get creative…but I like a challenge. (No foods that start with “X”, whoops…xylitol?)
This was my “A” experiment, Apple Cinnamon Overnight Oats! Anyways, do you know the benefits of chia seeds? oatmeal? cinnamon?
Let me just say that these jars I’ve been digestin’ in the morning have been super health punches. According to Dr. Oz (lolz yes Dr. Oz) 1 tsp of cinnamon every morning can actually act as a metabolism booster in the sense that it makes the body more sensitive to insulin, which regulates your blood sugar and glucose metabolism. Your blood sugar level determines whether your body burns fat or stores it.
Chia seeds are in a league of their own as far as benefits go. I can tell you from my own experience I can feel the difference, if you want to start long distance running…I recommend you start eating chia seeds. They can power you for miles on end! It’s also another blood sugar balancer, and also assist with weight loss. Only because they expand in your food and your stomach, making you feel fuller for longer and therefore…not hungry! I mean, I eat my chia oatmeals at 6:30 every morning…and don’t need to eat again until 2 PM or later. (Yesterday, I was able to go for a run after I came home from work…powered by the chia seeds I ate at 6:30 AM!) Not to mention the healthy Omega-3 oil in them.
Oatmeal in the morning is both delicious, filling and…lowers your cholesterol! Good source of fiber, vitamin E, zinc, selenium, copper, iron, manganese, and magnesium.

You know what this is? This is me not finishing my dinner. This is me finally taking the steps to STOP cleaning my plate/having a second serving and then licking the pot clean. (exaggeration but I think you get the idea)
